The Broad Palate – Jan ’24

A couple of warming recipes to fend off the January chills…

Scouse (or Lobscouse) – serves 4-6

Derived from ‘lapskaus’, a traditional, one-pan stew said to have been introduced to Liverpool by Norwegian sailors, this is a great winter stand-by, using beef or lamb and January’s seasonal root vegetables. Leave out the meat if preferred. Typically served with pickled red cabbage and a doorstep of crusty fresh bread (a squeeze of HP not to be underestimated). Every household has its own version. No need to follow exact weights, go by eye.

  • 50g butter
  • 2 onions, coarsely chopped
  • 3-4 large potatoes, peeled and cut into large chunks
  • 3 large carrots, peeled and roughly sliced
  • 1 medium swede, peeled and cut into large chunks
  • 1 cup pearl barley or dried soup mix (soaked in water for 1 hour)
  • 750g stewing beef or lamb, preferably in thick slices (I use beef as less fatty)
  • Marrowbone (optional)
  • 1.5 litres beef stock

Method:

Rinse and drain the barley/soup mix. In a large pan, melt the butter on a medium heat and seal the meat on all sides.
Add the onion and fry for 2 minutes, before adding the stock and barley/soup mix. Add marrowbone, if using.
Simmer until the meat is tender and the pulses cooked, then remove the meat onto a plate.
Season the broth with salt and pepper (plus an optional good dash of Worcestershire sauce), add the carrots and swede then after 20 mins add the potatoes and cook until everything is cooked.
Remove and discard marrowbone. Add the meat back in, check seasoning, and enjoy.

Ginger Cake

Best wrapped and kept for a few days before eating, but easier said than done. You will need a 2lb loaf tin, buttered and lined, and a hand whisk.

  • 225g self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tablespoon ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon mixed spice
  • 115g hard butter, cubed
  • 115g black treacle
  • 115g golden syrup (measure treacle and syrup straight into a saucepan)
  • 115g dark muscovado sugar
  • 275g milk (whole, preferably) (measure sugar and milk into another saucepan)
  • 1 egg, beaten
  • 4 balls stem ginger in syrup, chopped (Opies brand is good)

Method:

Heat oven to 180C/160C fan/Gas mark 4.
Sift dry ingredients together into a large bowl and rub in the butter (the colder your hands, the better).
Gently warm the treacle and syrup until runny but not hot. Do the same with the sugar and milk in the other pan, just enough to dissolve the sugar.
Add the treacle/syrup mixture to the dry ingredients, whisk, then add the milk/sugar mixture and the egg.
Whisk briefly until you have a smooth batter. Fold in the stem ginger pieces, ensuring they are fairly evenly dispersed.
Pour into the loaf tin, give the tin a sharp tap on the worktop and bake for around 40-45 minutes or until a skewer comes out clean.
Leave to cool in the tin for 15 minutes, then remove and place on a wire rack.  Keeps well.

At this morning’s FareShare in Drimpton, Yeo Valley donated a range of their fully organic soups made with natural and freshly sourced ingredients to be included for distribution – most welcome in this very cold weather.

33 members attended today – feeding a minimum of 65 individuals with in date produce which would otherwise be thrown away!

This is a weekly membership scheme* aimed at helping people make their money go further by reducing food shopping bills.
You must register to become a member. To become a member, collect a form on a Friday morning or request by emailing: FSSouthernCentral@fareshare.org.uk. Once completed, proof of address/ID needs to be provided and you email the completed form to the same email address (or alternatively, bring along on a Friday morning 🙂 ).

Some 2023 facts and figures from the Met Office climate station at Providence Farm in Common Water Lane, Broadwindsor:

2023 has been the wettest calendar year (1561mm) since 1872 (1755mm).
1982-2023 mean for the year is 1141mm.

December 2023 was the wettest (292mm) since 1934 (351mm).
1982-2023 mean for December is 136mm.

Recycling Update: No Blister Packs Please

Further to previous advice, empty blister packs for medication CANNOT be included with the foil in the bins at Comrades Hall. I was advised by an employee at Bridport recycling centre that they could be, but, it has recently come to light that this is incorrect. Any branch of Superdrug will accept them so please recycle them there.

Hatha Yoga With Leon Lord

Ha means sun and tha moon, stick them together and they imply that we are trying to balance the two energies with in us.

On Tuesdays, 10.45am to 12pm Leon Lord is holding Hatha Yoga classes at The Comrades Hall for only £8.50/session 🙂

My sessions start with 10 min Pranayama – breath work, where we focus on Yogic breathing practices to help cleanse and balance ourselves.
Then it is around 50 min of Asana – postures, stretching and strengthening the body to release toxins and emotions.
Last of all comes 15 min of Yoga Nidra – Yoga of sleep, we lie on the mat and focus internally using our breath and visualisations to bring peace and deep relaxation.

Salmon in Filo (serves 4)

Great with new potatoes and green beans or tender stem broccoli. Serve with tartare sauce (or a bowl of shop-bought sour cream and chive dip!). For a vegetarian version, use mounds of cooled, roasted vegetables (without too much moisture) instead of the fish.

  • 4 sheets filo pastry
  • 125g/4.5 oz butter, melted
  • 4 skinless, boneless salmon fillets
  • 250g/8 oz plain/garlic & herb cream cheese
  • 4 handfuls watercress, coarsely chopped + 4 sprigs to garnish
  • Sesame seeds (optional)
  • Salt and pepper

Method:

Heat oven to 190°C/170°C fan/Gas 5.
Lay a sheet of filo on your board, brush with butter and fold so that the two short sides meet. Brush with butter.
On a short side, place a salmon fillet around 1.5 ins from the edge and season. Add a quarter of the cream cheese along the top of the fillet, then watercress to taste.
Roll up carefully, buttering and folding in the sides as you go, making a parcel. Repeat with the other 3 fillets. Place on a buttered baking tray, ensuring that the salmon is on the bottom. Brush parcels with butter, sprinkle with sesame seeds if using, and bake for around 30 minutes or until golden brown.
Garnish with saved watercress.

Easy Chocolate Mousse (makes 6)

My version of a cracking Delia recipe from the 1960s. Use 200g dark chocolate if you prefer. I add coffee powder to bring out the taste of the chocolate – it won’t add any coffee flavour.
Ring the changes by adding the zest of a large orange, or a crushed-up chocolate honeycomb bar, or a couple of tablespoons of your favourite liqueur. Can be made a day ahead.

  • 100g/3.5 oz dark chocolate (min 75% solids)
  • 100g/3.5 oz good quality milk chocolate
  • 3 large eggs, separated
  • 120ml/4fl. oz warm water with 1 heaped tsp instant espresso /coffee powder*
  • 40g/1.5 oz caster sugar
  • (*if using liqueur, use 30ml, and reduce coffee + water to 90ml)
  • Raspberries and double cream to serve (optional)

Method:

Place chocolate and coffee water (+ liqueur if using) in a heatproof bowl, melt gently over a pan of barely simmering water. Stir occasionally until the chocolate has melted.
Allow to cool until tepid then add egg yolks and quickly stir until smooth and shiny.
Whisk egg whites to soft peaks with a pinch of salt to stabilise, then gradually add the sugar and whisk until glossy.
Using a large metal spoon, mix a dollop of egg white into the chocolate mixture to loosen it up, then add the rest of the egg white, gently folding and cutting, until there are no more visible clumps of egg white.
Spoon into ramekins or dessert glasses and refrigerate for 5-6 hours.
Serve with cream and raspberries if liked.

Broadwindsor Coffee Club News

The new service times for Broadwindsor Post Office are:

  • Mondays 12.15 – 1.15pm &
  • Thursdays 9.15 – 10.45am

The P.O. mobile van is here for a shorter time than we have been used to and every effort is being made for the the new Post Office change to run smoothly. Please, during this transition period, patience and cooperation is required at times but customers can be assured that no one has to wait outside in the wet/cold… Seating and warmth is available  in the Comrades Hall Foyer, with you looking after your turn. This will also help with establishing a queuing system at very busy times.
To coincide with the new hours, you’ll also have the opportunity to enjoy fresh coffee or tea and the chance for a chat in in the warmth of the Servery inside Comrades Hall on:

  • Mondays from 11.00am to 1.30pm &
  • Thursdays from 9.00 am to 11.00am

A date for your diary: Monday, December 18th  – there will be mulled wine, sausage rolls, mince pies, etc. to celebrate the Christmas season along with a raffle for a hamper.  The Comrades Hall 100 Club December draw will also be held that morning.

More Volunteers are needed to keep this social aspect around the PO visit going by manning a coffee pot and chatting for an hour or two!  Please come along and offer your help 🙂

Do come along and support the Coffee Club and Post Office, this is a valuable service we need to maintain for the benefit of the village.
