The Bishops’ Kitchen – October 21
This month you are offered two more delicious Apple recipes –
TREACLE APPLE PUDDING
- 3 cooking apples, peeled cored & chopped
- about 250g of apple
- 100g light brown sugar
- 50g golden syrup plus
- 2 tbsp. butter for greasing
- 1 eating apple
- squeeze lemon juice
- 175g self-raising flour
- 1tsp bicarbonate soda
- 2 tsp ground cinnamon
- 1tsp ground ginger
- 1 large egg
Method:
Put apples in saucepan. Add 100ml water bring to boil cover & cook for 5 mins until the apples are very soft. Then beat to a puree, add sugar & 50g of syrup bring to a simmer then leave to cool.
Grease a 1.3 litre pudding basin and by spoon add 2 tbsp of syrup into the bottom.
Peel & core the eating apple, slice half & chop rest. Then toss in lemon juice & place the sliced apple in syrup in the bottom of basin.
Sift the flour bicarb, spices & pinch of salt into a bowl.
Beat the egg into the apple sauce, add remaining chopped apple then tip into the bowl & stir until smooth.
It will start to rise a little as you mix quickly turn the batter into the basin, level & the top.
Bake for 40-45 mins @180/gas 4 until well risen & until a skewer inserted comes out clean.
Cover with foil towards the end of cooking if the sponge browns to quickly leave to rest for 5mins turn onto plate & serve.
APPLE STRUDEL
- 750g Bramley apples peeled cored & sliced
- 2 tsp ground cinnamon
- 1 lemon zest only
- 2 tsp lemon juice
- 100g caster sugar
- 75g raisins
- 95g butter
- 40g white bread crumbs
- 1tbsp icing sugar
- 6 large sheets filo pastry
Method:
Pre heat oven to 190c/gas5 line a baking tray with baking parchment.
Mix the apples with lemon zest, lemon juice, cinnamon, sugar & raisins, in a small frying pan.
Melt 20g butter & fry the breadcrumbs until golden brown then add to apple mix.
Melt the remaining butter in a pan, on a clean, dry tea-towel lay a sheet of the filo & brush with melted butter lay another sheet on top & repeat until you have used all of the filo.
Pile the filling along the length of the pastry and on one side about 3cm from the edge using the tea-towel to help you, roll the pastry up to enclose the filling.
Tuck the ends in & roll seam-side down onto the baking sheet brush with the remaining melted butter.
Bake for 40-45 mins until golden brown leave to cool to room temperature & dust with icing sugar.

Brian Hedditch: 15.03.1937 – 27.09.2021
Brian passed away peacefully at home, surrounded by his family.
Born at Netherhay Farm, he spent most of his life in the parish. His life revolved around his family, farming and the community.
Brian’s funeral service will take place on Tuesday 12th October, 12.30pm, at Broadwindsor church, followed by a wake at Comrades Hall. All will be welcome to join the family in sharing happy memories of Brian over light refreshments. A private burial will be held in Burstock.
Sincere condolences go out to his family at this sad time.

It’s National Black Dog Day – 1st October
Started in 2012, October 1st is National Black Dog Day! It’s a day to get the word out and encourage people to adopt black dogs, who often get left behind in shelters just because of the colour of their fur.
Referred to as “Black Dog Syndrome”, this is a phenomenon where black dogs are passed over for adoption in favour of lighter-colored animals 🙁
Among dogs, yellow dogs were considered friendliest, brown dogs second friendliest, and black dogs least friendly. Darker pets were similarly judged less adoptable and black dogs were considered the most aggressive.
The term “black dog” is most commonly used to describe a state of depression, characterised by either poor behaviour or the lack of will to do anything, including things you once loved.
Not to be confused with National Dog Day on August 26th which encourages dog ownership of all breeds – when seeking a new companion, be sure to consider the mutts, mixes, purebreds, and everything in between 🙂
The Dog’s Trust have lauched a National Dog Survey. They’re calling on all dog owners to take 10 minutes to let them know how their dog has been coping since the pandemic began. Your answers will help them ensure a moment for all owners to unite for the happiness of their dogs. As all dogs begin to adjust to the new normal, they are there to help..

The Comrades Arms Opens At 6pm Tomorrow
Opening it’s door tomorrow (Friday 1st Oct) at 6pm is The Comrades Arms in the Lewesdon Room, upstairs at the Comrades Hall in Broadwindsor.
Recently returned from France, village resident Andrew Hookings will be running the Comrades Arms as an individual, along with the support of volunteers. He did this several years ago, for a period of 4 weeks inbetween landlords Rich & Kate Moulsdale and Spike & Vikki who had the tenancy at The White Lion. It proved very successful and the proceeds, almost £2,000, went to the village hall.
Andrew commented: “The Comrades Arms will provide a venue in the heart of the community for people to get together socially and enjoy a drink, whilst the White Lion is closed.
With the “Save The White Lion” campaign getting off the ground soon, it seems appropriate for the proceeds from The Comrades Arms to go to such a worthy cause.”
As well as being open at the weekend, the Comrades Arms will be open on a Tuesday evening for those who’d like to eat their fish ‘n’ chips from Nat’s van with a drink.

With some stock and supplies, £400 worth this week, being sourced through Broadwindsor Community Stores, our village shop should benefit too 🙂
Other ales and ciders have also been sourced locally.

Collect Your Postage Stamps For Weldmar Hospice
This is 11 year old Zoe Raymond from Blackdown and she is collecting postage stamps to raise funds for the Weldmar Hospice. The stamps need to have at least 1cm of envelope around them.
She is collecting them in memory of her grandad Lloyd Curtis, who died earlier this year. If anyone has any, then please call 01460 30471 and Zoe’s mum can collect them.
