Salmon in Filo (serves 4)

Great with new potatoes and green beans or tender stem broccoli. Serve with tartare sauce (or a bowl of shop-bought sour cream and chive dip!). For a vegetarian version, use mounds of cooled, roasted vegetables (without too much moisture) instead of the fish.

  • 4 sheets filo pastry
  • 125g/4.5 oz butter, melted
  • 4 skinless, boneless salmon fillets
  • 250g/8 oz plain/garlic & herb cream cheese
  • 4 handfuls watercress, coarsely chopped + 4 sprigs to garnish
  • Sesame seeds (optional)
  • Salt and pepper

Method:

Heat oven to 190Ā°C/170Ā°C fan/Gas 5.
Lay a sheet of filo on your board, brush with butter and fold so that the two short sides meet. Brush with butter.
On a short side, place a salmon fillet around 1.5 ins from the edge and season. Add a quarter of the cream cheese along the top of the fillet, then watercress to taste.
Roll up carefully, buttering and folding in the sides as you go, making a parcel. Repeat with the other 3 fillets. Place on a buttered baking tray, ensuring that the salmon is on the bottom. Brush parcels with butter, sprinkle with sesame seeds if using, and bake for around 30 minutes or until golden brown.
Garnish with saved watercress.

Easy Chocolate Mousse (makes 6)

My version of a cracking Delia recipe from the 1960s. Use 200g dark chocolate if you prefer. I add coffee powder to bring out the taste of the chocolate – it won’t add any coffee flavour.
Ring the changes by adding the zest of a large orange, or a crushed-up chocolate honeycomb bar, or a couple of tablespoons of your favourite liqueur. Can be made a day ahead.

  • 100g/3.5 oz dark chocolate (min 75% solids)
  • 100g/3.5 oz good quality milk chocolate
  • 3 large eggs, separated
  • 120ml/4fl. oz warm water with 1 heaped tsp instant espresso /coffee powder*
  • 40g/1.5 oz caster sugar
  • (*if using liqueur, use 30ml, and reduce coffee + water to 90ml)
  • Raspberries and double cream to serve (optional)

Method:

Place chocolate and coffee water (+ liqueur if using) in a heatproof bowl, melt gently over a pan of barely simmering water. Stir occasionally until the chocolate has melted.
Allow to cool until tepid then add egg yolks and quickly stir until smooth and shiny.
Whisk egg whites to soft peaks with a pinch of salt to stabilise, then gradually add the sugar and whisk until glossy.
Using a large metal spoon, mix a dollop of egg white into the chocolate mixture to loosen it up, then add the rest of the egg white, gently folding and cutting, until there are no more visible clumps of egg white.
Spoon into ramekins or dessert glasses and refrigerate for 5-6 hours.
Serve with cream and raspberries if liked.

The End Of Mow-Vember…

The campaign Movember is an annual event involving the growing of moustaches during the month of November to raise awareness of men’s health issues, such as prostate cancer, testicular cancer, and men’s suicide. You can donate HERE.

At last Friday’s Open Mic night in the White Lion, resident poet, Peter Roe recited his poem ‘Folliculaphillia‘ to much merriment and mirth…

Folliculaphillia

Last year in Mow-Vember my partner for a jokeā€¦
Said grow a moustache like that Wolverine bloke
I said to my girl ā€œmy dear wonā€™t that tickle ya?ā€
She said ā€œI donā€™t mind, I have Folliculaphilliaā€¦ā€

Folliculaphilliaā€¦ if you should care
It means sheā€™s a woman and she likes facial hair
But a Wolverines ā€˜tache canā€™t be grown in just one day
So I tried different styles as it grew on the way

I tried a Chaplin, a Chevron and a Painterā€™s Brush
A Kaiser, a Dali, a Lampshade and a Walrus
A Fu Manchu, Frank Zappa and Asterix The Gaul
An Albert Einstein, a Hugoā€¦ I tried them all

In films, cartoons and games ā€˜taches steal the show
Captain Haddock, Captain Hook, Luigi and Mario
For some men though proper lip rugs are a mystery
Because they are suffering from mustachular dystrophy

But the Wolverines sideburns, these bits on the sideā€¦
Wouldnā€™t grow on my cheeks, believe me I triedā€¦
and I think itā€™s too late for these muscles to growā€¦
and just look at my fingers my nails hardly show!

So a cautionary tale to all of you folks out thereā€¦
you canā€™t become The Wolverine by just growing facial hair
And the reason for thisā€¦ I think that I foundā€¦
Is that Man Makes Moustache not the other way round!

Movember first started in Melbourne, Australia in 2003 when two friends (Travis Garone and Luke Slattery) talked 30 ofĀ  their friends into growing a ā€˜Moā€™ (moustache). They had been inspired by a friendā€™s mother who was fundraising for breast cancer, they decided to make the campaign about menā€™s health and prostate cancer and then including men’s mental health and suicide prevention.

Since 2003, Movember has funded more than 1,250 menā€™s health projects around the world, challenging the status quo, shaking up menā€™s health research and transforming the way health services reach and support men. You can donate HERE.

Broadwindsor Coffee Club News

The new service times for Broadwindsor Post Office are:

  • Mondays 12.15 ā€“ 1.15pm &
  • Thursdays 9.15 ā€“ 10.45am

The P.O. mobile van is here for a shorter time than we have been used to and every effort is being made for the the new Post Office change to run smoothly. Please, during this transition period, patience and cooperation is required at times but customers can be assured that no one has to wait outside in the wet/cold… Seating and warmth is availableĀ  in the Comrades Hall Foyer, with you looking after your turn. This will also help with establishing a queuing system at very busy times.
To coincide with the new hours, you’ll also have the opportunity to enjoy fresh coffee or tea and the chance for a chat in in the warmth of the Servery inside Comrades Hall on:

  • Mondays from 11.00am to 1.30pm &
  • Thursdays from 9.00 am to 11.00am

A date for your diary: Monday, December 18thĀ  – there will be mulled wine, sausage rolls, mince pies, etc. to celebrate the Christmas season along with a raffle for a hamper.Ā  The Comrades Hall 100 Club December draw will also be held that morning.

More Volunteers are needed to keep this social aspect around the PO visit going by manning a coffee pot and chatting for an hour or two!Ā  Please come along and offer your help šŸ™‚

Do come along and support the Coffee Club and Post Office, this is a valuable service we need to maintain for the benefit of the village.

Broadwindsor Tree Lights Switch On – Thursday, 30th Nov

All are invited to come along to Bernards’ Place in the Square at 6.30pm on Thursday, 30th November to see the village’s Christmas tree lights be switched on for the festive season šŸ™‚

Thank You For Coming To The Firework Display

The weather was so kind for our firework display, which was, as last year, a great success and raised funds for Broadwindsor Cricket Club and Broadwindsor Comrades Hall.
We are grateful to our sponsors, Symonds and Sampson, Broadwindsor House Care Home, Cllr Simon Christopher and The Knapp Inn.
As a result of the evening the Cricket Club and Broadwindsor Comrades Hall have shared the profit on the night, each receiving Ā£681.65.
My thanks to the cricket club and their helpers who ran the bar and BBQs.and the village school PTA who had a stall raising money too.
I also want to thank my team of volunteers who helped set up and light the fireworks, and kept the spectators safe on their way to and from the cricket field.Ā  Also to Dorothy Rowe and Margery Hookings who successfully rattled their donation buckets and to Sara Dyke, our First Aider.
My thanks also to P H Hardwill for lending us their tower light, Shane and Ellen Pym for lending us their generator, John Staff and Martin Burt for their tower safety lights and Stefan Nikolov for the use of his safety equipment.
And finally, a massive thank you to all the spectators who came along and enjoyed the evening.Ā  We hope to see you all again at next year’s Broadwindsor Firework Display.

Santa Visiting Broadwindsor – 6pm, Saturday, 9th Dec.

Thanks to the Rotary Club of Brit Valley, Santa will be visiting the village again šŸ™‚ He usually parks in the bay by the primary school, opposite the allotments.

BSO Trio Sunday Serenade – 19th November

As part of an Artsreach funded project, a trio of musicians from the Bournemouth Symphony Orchestra (BSO) will perform from 2.30pm on Sunday, 19th November.

A Bournemouth Symphony Orchestra trio of flute, cello and harp will serenade you in a programme of music through the ages, from Bach and Bizet to Ibert and Joni Mitchell, with pieces especially arranged for this unique and beautiful line up.

This special afternoon recital is presented from the stage by the musicians, in an intimate and relaxed setting.Ā  Refreshments Available (cash only).

FMR Trust Award 2 Grants To Village Groups

Following last night’s Parish Council meeting at Blackdown, The FMR Trust awarded two grants – to West Dorset Rangers to support the cost of a visit to the Houses of Parliament and to Broadwindsor School to help with funds needed to replace their swings. šŸ™‚
